This study, Escherichia coli and Salmonella spp contamination of sausage-type Kilishi in Owerri, Nigeria: A potential public health risk, aimed to determine the occurrence of Escherichia coli and Salmonella spp contamination of sausage-type Kilishi vended in Owerri metropolis.50 Sausage-type Kilishi was randomly and purposively sampled from supermarkets in Owerri metropolis, and standard conventional microbiological methods were used to isolate E. coli and Salmonella. Additionally, this study revealed that Sausage type Kilishi in Owerri was contaminated with E. coli and Salmonella across all study areas, namely Douglas, Obinze, World Bank, New Owerri, and Ekenebu. Even though some of the study areas had higher microbial counts, especially in New Owerri (5.5×10-8 CFU/g) and Ekenebu (5.4×10-8 CFU/g). However, in some study areas, the colony count was high, resulting in isolation of both E. coli and Salmonella. While other samples showed only one isolation, having either E. coli or Salmonella. Moreover, this study revealed an overall occurrence of microbial contamination of the samples (n=50) with E. coli and Salmonella, which stands at 16%. Therefore, it is imperative to observe strict hygiene at all levels of production and packaging for better shelf-life and quality of the Kilishi to safeguard public health.
